Our beans start their journey on small farms in regions where coffee is treated as a living crop, not a commodity. From misty highlands in Central America to the bright, floral estates of Ethiopia, each growing region adds distinct character — the altitude, the soil, and the seasonal rains shape the bean’s natural sweetness and acidity.
We choose to work with growers and cooperatives who practice sustainable farming — shade-grown systems that protect biodiversity, careful water stewardship, and soil-friendly techniques that return nutrients to the land. The Art of the Harvest
Harvesting coffee is slow, tactile work. The best beans are handpicked at peak ripeness — the glossy red cherries that have developed natural sugars and flavor complexity. Throughout, timing and cleanliness are paramount: careful fermentation, even drying, and precise milling keep the bean’s integrity intact.

When beans arrive at our roastery, the roasting process is where science meets craft. We roast in small batches to highlight each origin’s best notes — listening for the first crack, adjusting airflow and heat, and allowing the profile to develop until it reaches balance. Over-roasting masks origin character; we roast to reveal it.
